MEET CONFECTIONER KELLY SPEIDEL
Am I really a Belgian? Yes, I am! My great-grandparents immigrated from Muelebeke, in east West Vlaanders, after the end of WWI. I also lived in Belgium for a number of years, riding my bicycle, gawking at the beautiful horses, becoming a frietjes connoisseur with my husband, and eating all the chocolate I could find! I participated in several workshops under Bart Van Audenhove, owner and chocolatier, of Het Chocolade Atelier in Kinerooi, Belgium. His traditional chocolatier approach was slightly derailed by my constant encouragement for him to try my favorite combinations of chocolates we have in the United States. We decided on a happy medium of a non-traditional filling with Belgian origins, Speculoos, and the Speidelijke, as he named it was a hit! I was often teased that I should become a chocolatier in America, combining the tradition and goodness of Belgian chocolate and techniques with the creative, non-conforming, nature of my American upbringing.
Now is as good of time as ever to pursue a fun, tasty and creative adventure with my hobby turned passion. I hope you enjoy my products as much as I enjoy making them and my husband enjoys tasting them!
